While deliberating upon what I should make this week, I decided to bake something that isn’t actually sweet. I knew that a lot of what I will be making will be sweet and rich, so I made the decision to throw in a more savoury item, cheese biscuits! There was a minor change made to what would normally be used to make biscuits, which I describe in the tips and tricks section!

Recipe

Ingredients:

  • 2 cups Carbquik
  • 2 ounces cold butter
  • 1/2 cup shredded cheddar cheese
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1/4 heavy cream
  • 1/4 cup water

Preparation:

  • Preheat oven to 450 degrees F
  • Cut the cold butter into the Carbquik with a pastry cutter until the mixture resembles course meal. Add the cheese, salt, and garlic powder and blend well.
  • Mix the heavy cream and water together to equal 1/2 cup of liquid, pour into the dry mixture. Mix until the dough forms and comes together.
  • Drop the dough onto a lightly greased cookie sheet in approximately 1 ounce size portions.
  • Bake in the oven for 8-10 minutes until biscuits are golden brown. Biscuits are tender when hot, let slightly cool before serving.

Tips and Tricks:

  • Carbquik is simply a low carb version of bisquik, this swap can easily be made and the rest of the recipe should work perfectly fine!
  • If you do not own a pastry cutter, you can use two knives to cut the butter into the carbquik, it works just as well.
  • Mix until the mixture resembles course meal, I always try and envision what slightly wet sand looks like and keep an eye out for that texture.
  • The recipe calls for a greased baking sheet, I used a sheet of parchment paper and it works perfectly and saves time on cleanup.
