Okay y’all, I’ll be honest here… I kind of cheated with the recipe for this week. I have been meaning to take the time to bake something this week, and despite baking usually being a way for me to decompress, I have been struggling to set aside the time. So, I used a boxed mix. This definitely not what I would normally do, but hey, sometimes that’s what you’ve got to do, this is reality! I’ll include the recipe below, but just to be clear, it comes directly from a package. Recipe:

Cooking time: 15 minutes

Makes: 9 large or 18 regular sized cookies

Ingredients:

  • Cookie mix
  • 1 egg
  • 1/3 cup softened butter or margarine

Preparation:

  • Preheat the oven to 375 degrees fahrenheit for 18 cookies and 350 degrees fahrenheit for 9 cookies.
  • Combine the cookie mix, butter, and egg in a bowl and stir until a dough forms.
  • Drop the dough onto a parchment lined cookie sheet 2 1/2 inches apart.
  • Bake 12-14 minutes for 18 cookies, 17-19 minutes for 9 cookies, or until the edges are golden brown. Let cool for 2 minutes before removing from cookie sheet and letting cool completely on a cooling rack.

Tips and Tricks:

  • I used margarine for the recipe so I didn’t have to wait for the butter to soften. The butter should not be melted for this recipe, so if you need to put it in the microwave to soften, start low and slow.
  • I don’t have another trick… it’s packaged mix.
